Leaner picked Grenache for the nose, acid and tension without the typical confectionery Grenache palate. Cinsault for mouth feel and weight.\u003c\/p\u003e\n\u003cp class=\"MsoNormal\"\u003eAll parcels hand picked and processed separately. Post destemming, immediately pressed and cold settled overnight. Part barrel fermented, part tank, all wild yeast fermented and 100% malolactic fermentation. Post settling, all components racked and gravity fed back into barrel and tank. 6 months maturation time and cold stabled.\u003c\/p\u003e\n\u003cp class=\"MsoNormal\"\u003eParcels treated separately with their approach tailored and temperature controlled during fermentation. Grenache sites generally picked below 11 baume to focus acid, accentuate the nose and reduce the “strawberries and cream”.
