Sourced from Eden Valley, grown by yetti with webbed feet. Picked in the cool of night , 2/3ds pressed and settled for 24 hours. Juice carefully racked and sent to new and neutral French oak for barrel fermentation. Remaining 1/3rd sat on skins for 10 days, basket pressed and racked off lees into neutral French oak. 7 months in barrel, bottled unfined and unfiltered. Minimal sulphites on bottling.
